3 traditional Vietnamese food everyone should try at Mimosa

Pho

A warm, fresh, and flavorful soup made from smokey and filling ingredients, Pho is a classic meal if you’re looking for a truly Vietnamese experience.

Ingredients: 

  • 4 cups water
  • 1/4 cup soy sauce
  • 1/2-inch piece ginger, sliced into very thin strips
  • 1/2 small onion, sliced
  • 2 cloves garlic, sliced into strips
  • 100 g vermicelli or rice noodles
  • 200 g tofu
  • 1/2 cup mushrooms (any type will do)
  • 1 cup sliced cabbage, bok choy, lettuce, or other greens
  • Fresh bean sprouts
  • Coriander or cilantro leaves 
  • Chili sauce 

Cha ca

A healthy, refreshing, and tasty meal, Cha ca is a delicious combination of local Red River fish (such as carp or catfish), and fresh vegetables. 

Ingredients:

Fish

  • 3 tsp chopped fresh ginger
  • 3 red Asian shallots, chopped
  • 4 garlic cloves, chopped
  • 2 ¾ tsp ground turmeric
  • 60 ml fish sauce
  • 750g skinless blue eye cod or other firm white-fleshed fish fillets, cut into 4 cm pieces
  • 1 tsp freshly ground black pepper
  • 375g dried thin rice-stick noodles
  • 90g rice flour
  • 1 tsp salt
  • 80 ml vegetable oil, plus extra if necessary
  • 8 spring onions, trimmed and cut into 4 cm pieces plus extra, finely sliced, to garnish
  • 1 onion, halved and sliced
  • 2 bunches of dill, coarsely torn
  • 160g, roasted unsalted peanuts, chopped

Sauce

  • 80ml mam nem (Vietnamese fermented shrimp sauce)
  • 3garlic cloves, crushed
  • 1 tbsp caster (superfine) sugar
  • 1 lemongrass stem, white part only, finely chopped
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 2medium red chilies, finely chopped
  • 95g very finely chopped fresh pineapple flesh

Che Ba Mau

A colorful and eye-catching dessert with 3 different bean layers, you will be taken on a multi-textured, ice-cold dessert experience you won’t forget!

Ingredients:

  • 1/2 cup split
  • Pandan Jelly Layer:
    • 1 tbsp agar powder
    • 2 tbsp sugar
    • 2 cups water
    • 3 drops pandan flavoring
  • Sugar Syrup:
    • 1/2 sugar
    • 1/2 cup water
  • Sweet Coconut Cream:
    • 1 can of coconut cream 
    • 2 tbsp sugar or more depending on your preference
  • Other layers
    • 1 can red kidney beans, rinsed and drained
    • 2 cups shaved ice
